So what's Baked Oatmeal anyway?

Well, my friend Elm wanted to know about Oatmeal Bake. It is just so yummy, that I am going to share. We sprinkle ours with brown sugar and cinnamon before we pop it in the oven. I also bake, cut up and freeze in squares. This makes for an easy breakfast on those school mornings. Enjoy!

Baked Oatmeal
2 c. oatmeal
1/2 c. brown sugar
3/4 c. milk
2 eggs
1 teaspoon baking powder
1/4 teaspoon salt
1/4 c. melted butter

Mix all well. Bake in baking dish sprayed w/Pam for 20-30 minutes at 350 until golden brown. It's good served w/baked, spiced apples (like pie filling), peaches or milk or half & half. Kids who won't eat oatmeal like it. Enjoy!

An August Daybook Post

Outside my window...
A hot and sticky afternoon in Georgia. No breeze. Too hot for the bugs to even fly around.
thinking...
about our upcoming beach vacation and trip to Walt Disney for the first time. Exciting things to plan. All while trying to make it a "free" vacation. Just got the hotel in Orlando for "free" from my hubby's Marriott Rewards points. Yippee for that!
I am thankful for...
air conditioning and my old van. It's a 2004 and keeps on ticking. It doesn't look bad at all. My husband made it all clean inside (birthday present) and it gets me to where I need to go. I am so thankful I have a van that moves.
From the learning room...
It has been busy exploring American History and Swimming Creatures this week. The plans are coming together nicely. I am trying to put our Liturgical Plans for this week down on paper and will try to post soon. There is room for a little organization. My file crate is working great keeping up with those weekly printouts, experiments, coloring sheets, ideas..... I did label them Week 1-36 this year instead of dating them. This helps when we take an unexpected week off. No need to relabel them. I have also made a Home Learning Notebook with dividers to keep up with reading list, lesson plans, activity information, home school group info., etc... Everything in one place and NOT with the household stuff. Working much better than last year. I just need to make it pretty. Right now it is plain Jane white. You know I don't like that!
From the kitchen...
C-Sunshine made a batch of blueberry muffins this morning. I am just getting the three squares out these days. Need to work on Menu plans and try and bake and freeze for those busier days that are not far ahead. Thinking of baking....blueberry and blackberry muffins, oatmeal bake and some cookies to freeze and stow away.
I am wearing...blue jean capri's and a light blue top. Very plain. No makeup and it's almost 7:30 p.m., so it ain't gonna happen today. Sorry hubby.
I am creating...
a peaceful home environment. Finding everything a place and a place for everything. And creating a lot of bags to take to the Goodwill in the process.
I am going...
not too many places this week. Hoping to spend most days right here.......
I am reading...
Magnificat, daily. Also reading the Little Flower's Leader Guide. I am starting a new Little Flower Club at our parish in October. So looking forward to that!
I am hoping...
that my new iPad arrives soon. A birthday gift from my Dad. Thanks Dad, what a wonderful surprise. Now, to keep it away from the rest of the family!
I am hearing...
My girls giggling upstairs playing Nancy Drew. They just LOVE being detectives!
Around the house...
that garage is almost together. This week I hope to finish up. My dear hubby moved in a HUGE set of lockers. You know, the big huge school type lockers. Well, I have decided that C-Sunshine and K-Doodle need to decorate one and put there "go bags" in there for co-op, art class, etc... They are excited about that. I will try and post some pictures.
One of my favorite things...
the internet. I love reading blogs and keeping up with family and friends. I know there is bad with the good. But for our family, it's all good. I just wish society didn't have to deal with the bad. You know what I am talking about.
A few plans for the rest of the week:
home learning, church, planning, playing. Sunday we have a church breakfast and after our homeschool group is having a family picnic. Next week my oldest comes for a visit. Life is good!

Reflections on Learning Week 3

Can you say failure? On Mom's part? :) We did "do" school. Just not enough of it. Because Dad was out of town, I decided we should spend time with Nanny (my mom) and go to the lake. We did and had their huge pool with the gigantic water slide all to ourselves! However, now I have to revised all those assignments that I preassigned in Homeschool Tracker. Shame, shame. :) You can see how bad I feel about this.........

Take note. C-Sunshine and K-Doodle have remembered much from homeschooling last year. Thank goodness for that! It's working! Teeheehee

Reflections on Learning Week 2

This week was a productive week of learning. We added in our American History and Science. This year we are using Winter Promise American Story 1 as our core and adding in a lot of living books from Ambleside and MaterAmabilis to go alongside. Because I had American Story already, it was just a matter of pulling it out of the closet that made it so attractive. However, now that we are diving in, I really like it. I like having the lessons already planned out. What to read each day. I think I needed that break from Story of the World.

We also began our science program for this year. Exploring Creation With Zoology 2: Swimming Creatures of the 5th Day by Jeannie Fulbright. We are going to love this book. Ms. Fulbright has done a very nice job with the ocean creatures. My mother was so generous in buying us the Deluxe Experiment kit, sea monkeys and sea shells from Creation Sensation that go along. They just arrived yesterday and after looking through the experiment kit, it is well worth the expense. No more hunting down a red balloon and some AA batteries for an experiment. It's all there! We have a trip to the beach planned for early fall, so I am thrilled about exploring the ocean and everything in it. (oh, and so are the girls. :)

Goals for my Home Educated Children


Sarah over at Amongst Lovely Things asked what our goals are for our children in home education. What a great question? I don't think that I have actually ever put my goals down on paper, although my academic goals may be written down here or there. But, I have never taken the time to write down my goals for developing those little people. So, here they are......thanks Sarah.

My Goals for my Home Educated Children

First and foremost, I want my children to have a personal and intimate relationship with God their creator. To know him and be on their own walk with him; one that will take them through the rest of their life.

I want them to be able to relate and converse with people of all ages, races, and stages in life; to show manners and grace when speaking with others; to know how to carry on an engaging conversation and give others a chance to tell about themselves without being interrupted or cut short.

I want my children to love each other. To build close, personal relationship’s as sisters. To build bonds that will last a lifetime; to treat each other with kindness and respect; to defend and encourage one another during trials and times of difficulty. I want them to laugh and enjoy each other.

They should know how to tell and be on time. Know how to earn, save and spend money wisely. To know the basic facts and puzzles of numbers that will carry them through life and a love of numbers if they have one.

I want them to learn and love the written word. To foster a love of reading by providing lovely living books to expand their knowledge of the core subjects and also provide escape from the ordinary in pages of great adventure and fantasy.

They should explore fine arts through live performances, picture art study and composer study; be able to recognize many of the great artists and composers on sight or sound. I want them to have a basic knowledge of music and explore and become proficient on an instrument or in voice.

I hope to train my children in good habits that will carry them through life; Strong habits in personal hygiene and maintaining a home. I would also like to give them life skills in sewing, cooking, cleaning, gardening and the many other skills they may need.

I want my children to know their family and spend time with them; Not only their immediate family, but their extended family. I hope that they really know their grandparents and develop their own memories and special relationships with them. That their honor them.

I hope my children develop a servant’s heart; that they care about other people and their environment and work hard to maintain both; that they have a desire to serve others through acts of kindness, service and prayer.

I want my children to feel loved, honored, respected and listened to. I want to pass on how much we love them, to them. That they know we are learning at home because we want the very best for them. I want to further develop the little person that they already are.

Soft start to the learning year....


We sorta started schooling yesterday. Just a "soft start" with math and langauge arts. A week to smooth out the kinks. And yes, there were a few. Like the condition of the Learning Room. Trying to find the brand new pencils, glue, etc....

Sorry I have been silent. I have been busy. Too busy. I am going to pause and reflect this week on how I want and we NEED the learning year to flow. I am only planning six to 12 weeks ahead this year. Planning as interest and family needs change. They are so ever changing.
